If you are a fan of Jollibee, then you are well aware of what a Peach Mango pie is. Growing up, I used to think that the Apple Pie at McDonald’s was the ultimate fast food dessert. Then I sank my teeth into Jollibee’s Peach Mango Pie. That warm, sweet filling is so good, why not put it in a Hotteok? So we did it. We have been experimenting with so many different Hotteok concoctions that it only seemed natural to create a Peach Mango Hotteok Recipe.

Also, if you are a fan then you may have already made our version of the Peach Mango Pie. Just about the only work that you are doing for that scrumptious desserts is making the peach and mango filling. After that you are stuffing puff pastry sheets.

Now put both of those simple tasks together and Voilà. Yes, this will go down as one of the easier recipes for some new, sweet Korpino love.

Easy Versus Fast

When make making our Peach Mango Hotteok Recipe, keep in mind that there is a big difference between easy recipe and a fast recipe. Yes, between making the Hotteok dough, giving the yeast the time to do its thing and fusing the peach and mango flavors in one, does take some time. Although, the tasks are not difficult.

With that in mind, plan out the process for the occasion. If you want to impress your friends, after a home cooked dinner, do some prep work ahead of time. Make the filling the night before and make your dough an hour and a half before dessert time. This way you’ll be giving the dough time to rise and you can showcase your Hotteok wrapping skills and cooking in front of your friends.

Korpino Peach Mango Dessert Hotteok

Korean Street Food Stuffed with a sweet and tangy Peach and Mango filling just like the famous Jollibee pies. Perfect to top off a meal or just as a fulfilling snack.

Equipment

  • Hotteok Press

Ingredients
  

  • cooking oil enough to coat the bottom of the pan to fry the hotteok.

Hotteok Dough

  • 1 cup warm water warm but not over 180° or the yeast will die
  • 2 Tbs sugar
  • 1 packet active dry yeast (1packet is approx. 2 tsp)
  • ½ tsp Kosher salt
  • 1 Tbs vegetable oil
  • 2 cups all purpose flour

Filling

  • 1 can peaches 15.25 oz can, drained and chopped into cubes. Set syrup aside.
  • 10 oz frozen mangos thawed, chopped into cubes
  • ¼ cup peach syrup
  • 3 Tbso white sugar
  • 4 tsp tapioca powder dissolved in 1tbs water
  • 1 tsp ground cinnamon
  • 1 Tbs butter
  • 1 pinch salt

Instructions
 

Hotteok Dough

  • In a mixing bowl, combine the yeast, warm water, sugar, salt and oil. Mix until the yeast is dissolved. The yeast is activated when it starts to bubble.
  • Add flour and mix until the dough looks smooth.
  • Cover the bowl and let the dough rest for 1½ hours. It will double in size. Meanwhile, start preparing the filling.

Filling

  • In a pot on medium high heat combine peaches, mangoes, peach syrup, sugar, cinnamon powder, butter and pinch of salt.
  • Stir well. Add Tapioca powder dissolved in water.
  • On low medium heat, simmer until filling thickens to a jam consistency. Turn off heat and cool.

Making Hotteok

  • Place the dough on a floured surface and knead the dough.
  • Separate the dough into 8 equal balls.
  • Add oil to the pan set on low/medium heat.
  • Oil both hands, take a dough ball and flatten with your hands. Scoop 2 spoonfuls of filling onto the dough. Carefully pinch the dough closed.
  • Place the filled dough seam side down into the hot oil.
  • Allow the bottom (seam side) to cook for 30 seconds or until it is golden brown. Turn it over and press down with the hotteok press or the back of a spatula until it is about the size of a CD.
  • Flip and cook for another couple of minutes.
  • Serve while hot and enjoy!

Notes

Dough Recipe was adapted from Maangchi.
Pay close attention to heat temperature. It is very easy to burn the outside and have raw dough on the inside. 
And finally, hotteok is most delicious served hot. Enjoy!
