My Mother's Soegogi Muguk 쇠고기무국

Easy Korean Beef and Radish Soup

Ingredients
  

  • 8 ounces chuck roast sliced
  • 4 tsp beef Dasida
  • cups Korean radish chopped
  • 8 cups water
  • 3 cloves garlic minced
  • ½ tsp ground black pepper
  • 3 stalks green onion chopped

Instructions
 

  • Add water to pot and bring to a simmer on medium/low heat.
  • Add Dashida and garlic to water
  • Add beef and simmer on low heat for 1 hour (until beef is tender).
    *2 hours if your cuts of beef are thick.
  • Add radish, and ground black pepper
  • Simmer on medium/low heat until the radish is fully cooked. approx. 30 mins
  • Top with green onions and serve

Notes

If you like bigger pieces of meat simmer the meat on low for 2 hours before  adding the Radish. The soup is best when the meat is tender.
