Hotteok My Turon

Hotteok My Turon is the epitome of Korpino. Since we started Korpino Feed, my excitement was always for the Korean and Filipino fusion dishes that I can create. Both cultures have excellent foods with very distinct tastes. I love the spiciness that Gochujang and Gochugaru adds to Korean foods. In Filipino foods I love the vinegar and patis flavors and the list of desserts to top off any meal is endless.

Hotteok My Turon

Seventeen years and counting, our Korpino union is going and growing. Oddly enough, it has only been during recent times, that we first heard about the different Hotteok fillings. My wife was more accustomed to a Hotteok with a red bean filling, but when we saw one with caramelized brown sugar and almonds, we were sold. We knew that we had to start making them and experimenting different concoctions. Our minds were racing.

The Filipino dessert Turon is so delicious and popular that if you don’t act fast, someone is sure to eat it up. I know for sure that my youngest will eat Turon as if they were a casual snack, like cookies. Not to blame her though. Bananas are the highlight of many desserts worldwide. Now consider a warm, sweet plantain. Yuuuuuummmmmmmy!

So to capitalize on the idea of someone always taking my or the last Turon, the Hotteok My Turon was born. Imagine the straight from the pan, piping hot, crispy pancake dough with a caramelized brown sugar, plantain and jackfruit center. Yes, I know. You are willing to risk burns to the lips, tongue and esophagus. Whether as is or tossed in powdered sugar or cinnamon and sugar, the Hotteok My Turon is a game changer. Everyone will ask you what it is and demand for the recipe. You just tell them that it is Korpino and that it can be found at the Korpino Feed.

Turon Hotteok

Korpino is the binding of the Korean and the Filipino cultures and the Hotteok. My Turon is our edible emblem of unity. Enjoy the recipe!

Ingredients

Hotteok Dough

  • 1 cup warm water warm but not over 180° or the yeast will die
  • 2 Tbs sugar
  • 1 packet active dry yeast (1 packet is approx, 2 tsp)
  • ½ tsp Kosher salt
  • 1 Tbs vegetable oil
  • 2 cups all purpose flour

Filling

  • 2 plantains ripe, peeled and chopped into cubes.
  • ½ cup jackfruit canned, drained and thinly sliced
  • ¼ cup brown sugar

Instructions

Hotteok Dough

  • In a mixing bowl, combine the yeast, warm water, sugar, salt and oil. Mix until the yeast is dissolved. The yeast is activated when it start to bubble.
  • Add flour and mix until the dough looks smooth.
  • Cover the bowl and let the dough rest for 1½ hours. It will double in size.

Making Hotteok

  • Place the dough on a floured surface and knead the dough.
  • Separate the dough into 8 equal balls.
  • Add oil to the pan set on low/medium heat.
  • Oil both hands, take a dough ball and flatten with your hands. Scoop 2 spoonfuls of plantains onto the dough. Top with 2 slices of jackfruit. Add a couple of pinches of brown sugar. Carefully pinch the dough closed.
  • Place the filled dough seam side down into the hot oil.
  • Allow the bottom (seam side) to cook for 30 seconds or until it is golden brown, Turn it over and press down with the hotteok press or the back of a spatula until it is about the size of a CD.
  • Flip and cook for another couple of minutes.
  • Serve while hot and enjoy!

Notes

Dough Recipe was adapted from Maangchi.
Pay close attention to heat temperature. It is very easy to burn the outside and have raw dough on the inside. 
And finally, hotteok is most delicious served hot. Enjoy!
